Scones are the perfect pastry to pair with coffee or tea. At Good Day Sunshine Café, we have been making this Sunshine Scone since we opened. We even make it in different shapes to correspond with certain holidays to add that extra dash of festive joy!
Preheat oven to 375 Degree F (190 Degree C).
In a large bowl, stir together all the dry ingredients, except for the cranberries and walnuts.
Cut butter gradually into the dry mix until a coarse-crumb texture is achieved.
Add the cranberries and walnuts.
In another bowl, beat together the egg and half-and-half. Slowly blend the wet mixture into the dry by hand until dough is formed.
Turn out dough onto a lightly floured surface and knead 4 or 5 times. Shape dough into individual scones in your desired form.
Place scone on lightly greased or non-stick baking sheet and bake until golden brown, about 20 minutes.
(Makes approximately one dozen regular size scones.)
