Frank's Famous Greek Salad
I don’t know anyone who doesn’t love Greek salad. It makes for a perfect accompaniment to any meal. At lunch, to compliment a sandwich, or at dinner with pasta, or even traditional meat and potatoes. It’s wildly nutritious without tasting painfully ‘good for you’ and you can have leftovers the next day that aren’t soggy and wilted! The texture, as well as the taste is what makes it a winner… and the feta cheese of course. I mean, isn’t everything better with cheese?
Cut the cucumber in quarters, lengthwise.
Halve the onion, halve it again and then slice each quarter into bite-sized pieces.
Cut the cherry tomatoes in half.
Cut the avocado into bite-sized pieces.
Crumble the feta between your hands.
Add the juice from the lemon, the olive oil and pepper to taste.
Toss and serve!
