Christmas Cake Pops by Mona Aumair

Congratulations are in order for Mona Aumair as the winner of the Holiday Recipe contest. This sweet treat caught the eyes of everyone, and Mona’s determination to create the perfect holiday dessert to her liking is perfection, but we’ll let her explain:

“I never liked fruitcake until I adapted a recipe to my liking. The magic comes from ‘Stroh’ rum. One year I got the idea to make them into cake pops. Dip in chocolate, decorate to make a great dessert/gift.


Butter 2 Loaf Pans

Cut up cherries.

Mix in a bowl with raisins and rum. Cover and leave at room temperature for at least 1 hour.

Preheat oven to 325F.

Melt chocolate. Set aside.

Using a fork, blend together flour, baking powder and salt. Set aside

In a large mixing bowl, beat butter and sugar together until creamy.

Add eggs, one at a time, beating constantly.

Beat in ⅓ of the flour mixture. Then beat in vanilla, folowed by ½ of remaining flour mixture. Beat in chocolate.

Pour rum that hasn’t been absorbed by fruit into batter and beat in. Beat in rest of flour mixture. Stir in drained fruit and almonds.

Turn into pans. Smooth tops. Bake for 70 mins or until done. Cool then remove from pans and cool completely on rack. Brush cakes with more rum. Wrap in cheesecloth and then foil.”
